INGREDIENT OF THE MONTH: RED PEPPERS

Make the most of this great-tasting ingredient in store now

Called bell peppers by some and capsicum by others (because it belongs to the capsicum species, which means it’s also technically a fruit), red peppers have a sweet flavour that distinguishes them from their green, orange and yellow counterparts. Bring a flash of colour and burst of smoky flavour to your next barbecue with a blackened red pepper dip or savour the season’s bounty by marinating peppers with chilli and garlic – they’re wonderful on an antipasti platter, stirred through salads and stews or even gifted to a foodie friend.

WASTE NOT

Red peppers will keep in the fridge for up to two weeks but once cut should be used within one day.
