It’s a struggle to think of a dish that isn’t improved by the addition of pretty pomegranate. Look out for the particularly sweet and juicy Wonderful pomegranates from Peru in stores now.

HOW TO

Scatter the seeds over salads or stir into pilafs and individual creamy posset pots. Tart and sticky pomegranate molasses, meanwhile, can be used to create easy marinades, mixed into sparkling water, drizzled over meat before roasting or swirled through dips.

TOP TIP

Use the back of a spoon to whack an upturned pomegranate half until all the seeds tumble out and into a bowl or submerge the fruit under water and use your thumbs to gently coax the seeds from the pith.
