Plump briny mussels are a fabulous addition to your quick-cook produce arsenal. They’re also affordable, plentiful and a sustainable form of seafood.

HOW TO

Unlike more delicate shellfish, mussels’ rich, deep flavour means they hold their own against other strong-tasting ingredients; try them with a paprika-spiked tomato sauce or in an aromatic Thai green curry laksa.

TOP TIP

Mussels should be alive when you cook then. Tap open mussels on a surface and discard any that don’t close. Once cooked, the opposite applies: discard those that are still shut.
