Also known as corn on the cob, fresh sweetcorn is a delight and, when ripe, is delicious eaten raw. Baby corn is fantastic stir-fried, while the canned variety should be considered a store cupboard staple.

Shave the kernels straight from the cobs and roast in the oven then use to make a vibrant salsa-topped soup or simply scatter over a tomato salad. For a fun starter or snack, make griddled sweetcorn lollipops and serve with a soy, honey and sesame dip.

TOP TIP

When selecting corn, look out for cobs with plump, tightly packed golden kernels; if the kernels are smaller at the tip than middle it’s a good indicator of youth.
