For something simple char asparagus in a griddle pan and toss through a salad, add to cheese omelettes or pile onto toast with a poached egg. Asparagus and crab spaghetti takes only 20 minutes to make and is ideal for midweek, while a smoked salmon, lemon and asparagus wholemeal tart is just right for an outdoor weekend lunch.

TOP TIP

The easiest way to trim the woody ends from asparagus is to gently bend the spears and allow them to snap naturally at the right point. Cook and blend the trimmings in a vibrant vegetable soup or use as the base for a risotto stock.
