Tomatoes that have been left on the vine to ripen really are something special. With their lovely, sweet-sour, fruity flavour they make for delicious bite-sized snacks, are great, healthy additions to lunchboxes and add a burst of colour to tarts, salads and sandwiches alike.
While delicious simply drizzled with extra virgin olive oil and balsamic vinegar, they also taste wonderful cooked to a jammy sweetness in a caramelised onion and goats’ cheese tart. Or why not use them to make ketchup? Our version is rich with aromatic flavours and has a slight chilli kick.
If you sometimes find canned tomatoes taste a touch too acidic add a pinch of caster sugar to balance the flavours.
