Juicy, quick to cook and fun to eat, lamb rib cutlets or chops are brilliant for midweek meals. They can be kept simple, seasoned and paired with salad side dishes or shine as the star of your meal in a mezze spread – the options for this delicious cut of meat are endless.
Sizzle them on a griddle pan with lemon and thyme, or try sweet potato crêpes stuffed with lamb and asparagus and drizzled with a parmesan sauce. Mint-marinated cutlets paired with spiced chick peas, red pepper hummus and griddled aubergine sounds pretty perfect to us, too.
If you find yourself with leftover cooked lamb a shepherd’s pie made from finely chopped roasted meat is something rather special.
