For a light meal, thinly slice the watermelon and scatter with rocket and blue cheese or mix with cucumber and mint to serve with balsamic chicken. And for dessert? Think pink and pile it high on a pretty pavlova.

TOP TIP

Make low calorie ice-lollies by cutting watermelon into slices and removing any seeds. Insert a lolly stick into the curved edge (where the rind once was) and freeze.
