Kale is known for its healthy eating credentials and with good reason. A great alternative to other more ordinary vegetables, as well as heavier ingredients like potatoes, you’ll wonder why the superfood never entered your life sooner.
Spice it with sumac before baking to make crunchy kale crisps, eat it raw in a curried mango salad, or pair it with beetroot and brown rice for a New Zealand-style bowl of poached eggs in horseradish dressing.
