White nectarines have smooth, blushed-red skin, creamy flesh and a sweet, floral flavour. They’re wonderfully refreshing on their own, but also have an affinity with dairy products – serve with a cloud of whipped cream to see what we mean.
Sear sliced nectarines in a little butter and serve in a salad with asparagus and gorgonzola, or mix with passion fruit and mango to make a tropical slaw that tastes great with crispy curried sea bass tacos.
Although the two can be used interchangeably, white nectarines have a more delicate, sweeter flavour than yellow ones.
