Mussels have a satisfyingly deep, slightly briny flavour that should make you think of the sea. Look out for plump mussels and select those with tightly closed shells. Once cooked, discard any that don't open fully.
Serve them in an aromatic Thai green curry with naan bread on the side or in a flavourful bouillabaisse. Smoked mussels are great for adding an extra dimension to a luxurious fish pie.
They may not be the first ingredient that springs to mind, but mussels are the ultimate quick-cook, no fuss meal base; buy them ready-cleaned and debearded and you can have dinner on the table in a matter of minutes.
