Simmer them with spices, curry leaves and freshly grated coconut for a traditional Onam avial, or thinly slice and mix them with chillies, potato, onion and coriander before frying them for a dish of deliciously spicy veggie pakoras.

TOP TIP

When selecting your drumsticks look for those with smooth, green skin; any with pronounced bumps are likely to be past their best and may have a more bitter flavour than usual.
