Mandarin Shrimps with Grilled Gem Lettuce and Watermelon Salad

A light and vibrant dish, great for a summer afternoon with friends

Serves 2
Preparation: 15 minutes
Cooking: 20 minutes 

For the shrimps: 
10 large shrimps, shells and heads on
Juice and zest of 1 mandarin
2cm piece ginger, grated
1 small chilli, finely chopped 
1 tbsp soya sauce
3 tbsp olive oil plus extra for grilling

For the salad: 
4 heads of gem lettuce, cut into quarters lengthwise 
2 slices SpinneysFOOD Watermelon 
Ambrosi mozzarella cherries
½ small red onion, finely chopped 
1 tbsp apple cider vinegar
3 tbsp olive oil plus extra for grilling 

1 To make the sauce for the shrimp combine the mandarin juice and zest, ginger, chilli, soya sauce and olive oil, mix well and season with black pepper. 2 Brush the shrimp with some oil and season with the salt and black pepper, cook on a hot grill for about 6-8 minutes until cooked though. 3 Place them in the bowl of mandarin dressing as soon as they come of the heat. Toss to coat. 4 On a hot grill, grill the watermelon and gem lettuce until slightly charged but still crunchy. 5 To make the vinaigrette for the salad combine the red onion, apple cider vinegar and olive oil in a small bowl and mix well. Season with salt and pepper. 6 Place the grilled gem lettuce, watermelon and mozzarella balls on a platter and drizzle over the vinaigrette. Season with salt and pepper. 7 Serve with the shrimp.
