Whole Chicken with Mushroom and Za’atar stuffing

A classic dish with a Middle Eastern twist

Serves 4
Preparation: 20 minutes 
Cooking: 1 hour 

200g mushrooms, finely chopped 
2 tbsp butter 
¼ cup fresh za’atar leaves 
3 tbsp spinneysFOOD Za’atar Spice 
1 tbsp whole grain mustard 
150g spinneysFOOD grated mozzarella
1 whole spinneysFOOD whole chicken 
2 lemons
3 tbsp olive oil  
spinneysFOOD Salt and Black Pepper

1 Preheat the oven to 180℃, gas mark 4. 2 In a frying pan, sauté the mushrooms in butter for about 3-4 minutes. 3 Add the fresh za’atar, za’atar spice and whole grain mustard and mix well. 4 Fry for about 5-6 minutes, remove from the heat, allow to cool slightly, then add in the mozzarella and stir through. 5 Stuff the chicken cavity with the mushroom za’atar mixture and finally, place half a lemon in the opening to avoid the mixture from running out during cooking. 6 Place the stuffed chicken in a baking tray, drizzle with olive oil lemon juice and fresh za’atar leaves. Season well with salt and pepper. 7 Place in the oven and bake uncovered for 1 hour.
