Smoked Salmon, Exotic Mushroom and Asparagus Breakfast Stir-Fry

Power up your mornings with this nutrient-rich breakfast dish. It’s packed with Omega-3 fatty acids, as well as good-for-you vitamins and minerals. It's also quick to make!

Cooking time: 15 minutes

1 tbsp olive oil 
200g exotic mushroom, asparagus and garlic stir-fry 
2 tbsp whole grain mustard
1 tsp spinneysFOOD Paprika 
100g spinneysFOOD Organic Baby Spinach 
2 boiled eggs
200g smoked salmon
2 tbsp cream cheese 
2 slices bread, toasted
spinneysFOOD Salt and black pepper 
spinneysFOOD Black Pepper 
spinneysFOOD Micro Herbs, as needed

 

1 Heat the olive oil in a medium frying pan or wok, add the stir-fry vegetables and fry for 6-8 minutes until the mushrooms and asparagus are cooked. 2 Add the mustard, paprika and spinach to the pan and cook until the spinach is wilted. Boil the eggs to your preference. 3 Place the stir-fried vegetable mix into a bowl, top with the smoked salmon, boiled egg and a spoon of cream cheese. 4 Season to taste. 5 Garnish with micro herbs.
