Roast Chicken Sub with Avo, Feta and Red Pepper Hummus

A versatile and super easy dish suitable for dinner, lunch or a snack

1 x 450g spinneysFOOD Boneless Chicken Breast
2 tbsp olive oil
2 tbsp spinneysFOOD BBQ Seasoning 
juice of 1 lemon 
spinneyFOOD Salt to taste 
spinneysFOOD Black Pepper to taste 
1 medium baguette 
4 tbsp red pepper hummus 
30g feta 
1 avocado, sliced 
3 tbsp pine nuts 
1 cup mixed lettuce leaves 

1 Heat the oven to 180°C/gas mark 4. 2 Place the chicken breast in a small baking tray, drizzle over the olive oil, BBQ seasoning, lemon juice and season with salt and black pepper. 3 Bake in the oven for 30-35 minutes until the chicken breast is fully cooked. 4 Slice the baguette in half to make two bread rolls. Cut the rolls open from the side. Spread 2 tbsp of red pepper hummus in each half. 5 Cut the cooked chicken breast into strips and place them in the rolls. Top with the feta, sliced avocado, pine nuts and mixed lettuce leaves.
