As the Olympic torch lights up Rio, now is the perfect time to inject a vibrant Latin vibe into your cooking. Here, we’ve collated some of our favourite recipes that showcase Brazil’s love for delicious meats and colourful fruits and vegetables.

Brilliant beef

Why not celebrate the Olympics opening ceremony with crowd-pleasing grilled picanha skewers with herby chimichurri, matchstick chips and zesty lime mayo? Or opt for seared coriander-crusted rump cap with Brazilian rice fritters – a tasty combo of grilled steak (we like ours rare), easy dipping sauce and moreish crispy fritters.

Salad days

If you’re in training, Olympics style, and in the mood for a salad, you can’t go wrong with chicken salpicao. This crunchy, fresh salad is a colourful mixture of roast chicken (leftover chicken would be great here), carrots apple, onion, sweetcorn and fried potato. And although this salad is Mexican in name, it contains a line-up of classic ingredients used across Brazil: beans, rice, paprika, coriander and avocado.

Fantastic fruit

As a tropical country, Brazil produces a gorgeous glut of pineapples, mangoes, bananas, limes and coconuts.
