For an iftar or Eid centrepiece that looks and tastes spectacular, it has to be SpinneysFood ready-to-roast stuffed and rolled legs of lamb. The recipes have been developed by in-house chefs and the two gorgeous flavours – a Moroccan-style stuffing bursting with spices and dried fruit, and a zaatar salsa verde – transform this joint into something really special. For best results, roast the lamb in the centre of the oven at 180°C, gas mark 4: for medium, cook for 25 minutes per 500g, plus an additional 25 minutes; for well done, 30 minutes per 500g, plus 30 minutes. Leave to rest for 10 minutes before carving. We like to present the Moroccan-inspired lamb with herbed couscous and pomegranate and the zaatar version with saffron rice and griddled lemons for squeezing.
