Mushroom and bean burgers with lime slaw

Ingredients

  • 280g spinneysFOOD Asian Mixed Mushrooms, roughly chopped
  • 400g can spinneysFOOD Cannellini Beans, drained
  • 2cm piece ginger, finely chopped
  • 2 garlic cloves, crushed
  • 2 tbsp fish sauce
  • 100g plain flour, plus extra for dusting
  • 1 red chilli, deseeded and chopped
  • 3 spring onions, thinly sliced
  • 40g coriander leaves and stalks, plus 1 tbsp chopped leaves
  • juice of ½ lime
  • ¾ tbsp rice vinegar
  • ½ tbsp sesame oil
  • 1 carrot, peeled into ribbons
  • 125g red cabbage, thinly shredded
  • 1 tbsp vegetable oil
  • 4 burger buns, halved and toasted

Method

  1. Put the mushrooms, beans, ginger, garlic, fish sauce, flour, chilli, spring onions and coriander leaves and stalks in a food processor. Pulse until the mixture just starts to come together.
  2. With floured hands, shape the mix into 4 patties. Chill for 30 minutes.
  3. For the slaw, whisk the lime juice, vinegar and sesame oil together in a bowl. Stir in the carrot, cabbage and chopped coriander, then season.
  4. Set a frying pan with the vegetable oil over a medium heat. Fry the patties for 10 minutes, turning halfway, until golden brown and cooked through.
  5. Place a patty on each bun base. Top with the slaw and bun lids.
