- 1 baby gem lettuce, shredded
- 1 grapefruit, cut into segments
- 150g cooked prawns
- 30ml thousand island dressing
- pinch cayenne pepper, to garnish
- Divide the lettuce and grapefruit between two serving glasses or bowls.
- Put the prawns and thousand island dressing in a bowl, turn to coat the divide between the lettuce. Sprinkle with cayenne pepper to serve.
