Exotic fruit cones

Serves: 4 Prepare & Cook:

Ingredients

  • 2 ripe mangoes, peeled
  • 2 ripe papayas, peeled
  • 1 star fruit, peeled
  • 3 limes, 1 thinly sliced, zest and juice of 2

Method

  1. Carefully remove the cheeks of the mangoes, avoiding the stringy flesh around the stone. Slice lengthways into 1cm strips.
  2. Remove the seeds and membranes from the papayas. Slice lengthways into 1cm strips.
  3. Remove the seeds and membranes from the papayas. Slice lengthways into 1cm strips.
  4. Slice the star fruit, removing any pips.
  5. Make cones from squares of baking paper and secure with sticky tape or a paper clip. Pile equal amounts of each fruit into the cones, sprinkling over the lime zest and juice, and adding the lime slices, to serve.
