Bechamel sauce

Makes: 300ml Prepare & Cook:


  • 25g butter
  • 25g plain flour
  • 250ml milk


  1. Set a small saucepan with 25g butter over a medium heat. Once melted, stir in 25g plain flour and cook for 2 minutes, until you have a smooth paste and the floury taste has been cooked out.
  2. Gradually pour in 250ml milk, whisking continuously until smooth and thick. Season.
  3. To turn the béchamel into a cheese sauce, stir in grated or crumbled cheese until melted. Remove from the heat.

Top Tip

Adding blue cheese makes this ideal for a modern cauliflower cheese
