TO MAKE AT HOME:
1. Cinnamon and citrus fruit trifle pot
Dice a madeleine cake and arrange in a small pot. Layer over diced citrus fruit. Stir a pinch of ground cinnamon through ready-made custard, spoon over the fruit and top with lightly whipped cream.
2. Griddled citrus fruit with ginger syrup and toasted almonds
Set a griddle pan over a high heat. Brush with oil, add citrus fruit and char on both sides. Scatter with chopped stem ginger, drizzle with 1 tbsp ginger syrup and finish with toasted almonds.
3. Citrus fruit-topped French raisin and walnut toast
Beat together 1 spinneysFOOD Free Range Egg with 1 tbsp spinneysFOOD Icing Sugar. Coat 2 slices raisin and walnut bread in the mixture. Cook in a frying pan set over a medium heat for 4-6 minutes, turning halfway, until crisp and golden. Top with Greek yogurt, citrus fruit and a dusting of icing sugar.
