1. Open kofta flatbreads
Warm naan breads and spread with tzatziki. Top with griddled spinneysFOOD Beef, Garlic, Green Chilli and Coriander Koftas and garnish with Bombay mix and salad leaves.
2. Spiced scrambled eggs
Add a dash of curry powder to your scrambled eggs. Serve on toast and top with a liberal sprinkling of Bombay mix.
3. Bombay Bhel-style salad
Combine chick peas with Bombay mix, sliced red onion, pomegranate seeds and chopped mint. Finish with a dollop of yogurt and thwack of chilli pickle.
