TO MAKE AT HOME:
1. Veg-packed patties
Take a look at this okonomiyaki recipe. Skip the first step then switch things up: stir finely chopped broccoli, corn and salad onion into the batter in step two (with smoked salmon, if you like) and cook as instructed.
2. Honey and soy vegetable stir-fry with rice
Stir-fry the vegetables in a hot wok until just tender and finish with runny honey and a splash of soy sauce. Serve on a bed of rice and garnish with coriander.
3. Sweet and sour prawns and vegetables
In one wok, stir-fry the veggies until just tender. At the same time, fry prawns in another wok until just cooked through. Pour in some store-bought sweet and sour sauce and mix everything together to serve.
