TO MAKE AT HOME:
1. Aubergine & crispy sichuan chicken stir-fry
Coat spinneysFOOD Chicken Mince in cornflour and a little ground sichuan pepper. Fry until crispy, stir in runny honey and soy sauce then add to a wok of the vegetables stir-fried until tender. Toss together and garnish with the coriander.
2. Quick Thai red curry
Prepare and cook the stir-fry veggies as normal, adding a spicy Thai red curry sauce (or preferred alternative) towards the end to heat through. Serve with rice and garnish with the coriander leaves.
3. Aubergine & ginger stir-fry
Thinly slice the aubergine lengthways. Stir-fry in a hot wok with the rest of the veg and slivers of thinly sliced ginger. Mix in miso paste, runny honey and soy sauce then serve straight away.
