TO MAKE AT HOME:
1. Quinoa, herb and spiralised veg salad
Cook tricoloured quinoa to pack instructions, season and drizzle with extra virgin olive oil. Pile into a bowl and top with the veggies (dressed in a little oil) and some mint and parsley.
2. Spiralised veg salad with feta and pumpkin seeds
Toss the veg with olive oil (basil oil if you have it), crumbled feta and pumpkin seeds. Finish with basil leaves.
3. Spiralised vegetable and hummus pitta pockets
Griddle pittas, split in half, spread with hummus and fill with the vegetables.
