Grapefruit prawn cocktail
Shred 1 baby gem lettuce and segment 1 grapefruit then divide between two serving bowls. Coat 150g cooked prawns with 30ml thousand island dressing. Spoon over the salad and sprinkle with a pinch of cayenne pepper to serve.
Sparkling grapefruit and ginger juice
Slice 1 grapefruit into thin rounds and put in a jug filled with ice. Pour over equal quantities of Bottlegreen Sparkling Ginger and Lemongrass Presse and fresh grapefruit juice, adjusting with more or less to taste, then muddle to serve.

Whisk 4 egg yolks, 200g caster sugar and 180ml grapefruit juice together in a saucepan. Set over a medium-low heat and continue to whisk for 12-15 minutes, or until thickened. Beat in 75g butter then set aside to cool. Makes 300ml curd – store in an airtight container.
No-cook Indonesian chicken and grapefruit salad
Pare 2 grapefruit and segment into a bowl. Squeeze the juice from one of the segmented fruits into another bowl and whisk in 2 tbsp sweet chilli sauce, 2 tbsp ketjap manis, ¾ tbsp fish sauce and 2 tbsp vegetable oil. To the grapefruit segments, add 150g Tegel Meal Maker Cracked Pepper Shredded Chicken, 2 sliced spring onions and ½ bunch each coriander and mint leaves. Pour over half the dressing, scatter with roasted and salted peanuts and divide between two plates with the rest of the dressing.
