Cauliflower might not look like much, but we reckon it’s one of the most underrated veggies. Enjoy it silky smooth, crunchy or with charred edges.
1. Cauliflower and apple soup
Simmer 600g cauliflower florets with 1 litre milk, 2 bay leaves, ½ pack spinneysFOOD Thyme and 50g butter until tender. Remove the herbs and blitz until smooth. Top the soup with crème fraîche, apple matchsticks and croutons.

3. Cauliflower cheese toasties
Steam 6 cauliflower florets until just tender. Mix 1 tsp wholegrain mustard through 60g alfredo sauce and spread a quarter on to 2 slices of toast. Top with the cauliflower, spoon over the remaining sauce, scatter with 2 tbsp grated cheddar and grill.
